Should chili contain beans?

Not according to our two-time Houston chili cookoff champ, Richard Lewis, who repeated as winner again this year.

“Chili does not have beans in it,” says Lewis. “If it has beans, it is a bean soup, not chili.” Fair enough.

Lewis retained his peer-voted championship with a concoction that started with pecan-smoked, pulled and shredded chicken. Spices included were New Mexico Chili Powder, Ancho Chili Powder, Guajillo Chili Powder, Habanero Chili Powder, Cumin, Salt, Oregano, Parsley, Garlic Powder, and other additives.
